Quick Oatmeal Chocolate Chip Cookies


  • 1 cup almond flour
  • 1 cup gluten free oats
  • 1/4 cup coconut oil (melted)
  • 1/2 cup dry sugar (coconut sugar, sucanut, maple crystals)
  • 1/2 tbs arrowroot powder (optional)
  • 1/2 cup maple syrup or honey
  • 2 eggs (or vegan flax egg-1tbs ground flax or ground chia+3tbs warm water)
    • 1 tsp baking soda
    • 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1 tsp vanilla
    • 1/3 cup chocolate chips
    • 1 tsp cinnamon (optional)


Mix together dry ingredients. In a separate bowl, mix together all wet ingredients except coconut oil. Mix together wet and dry ingredients, THEN add coconut oil in last. Let dough stand in fridge until cooled (about 10 minutes).

Bake 375 8-12 minutes until browned on edges.
