When making the transition into healthy foods, you hear that one of the worst foods is any corn bi-product. While this is extremely true, there are ways around it! Certified NON-GMO corn products are available, and if you go back to the olden roots of our ancestors, you can make a deliciously nutritious corn bread to go with that pot of chili! This recipe is SIMPLE! If you buy a pre-made mix of glutenfree cornbread at the grocery store, it’s likely to be loaded with starches and preservatives. For those who are grain sensitive, this may even be ok for you, as this recipe requires soaking the corn meal first. This releases the acidity, and promotes easier digestion. This recipe is also starch-free for easier digestion. So go ahead, enjoy a heart warming loaf of cornbread!!
- 1 1/4 cup almond flour
- 1/4 cup NON-GMO organic cornmeal (soaked for 1-4hrs in 3tbs warm water)
- 3 eggs
- 1/3 cup melted coconut oil (or quality butter)
- 1/4 cup honey
- 1/2 tsp vanilla
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
Combine wet ingredients and dry ingredients in separate bowls. Mix well, then combine. Be sure to mix all the clumps out, a high speed mixer is easiest!
Bake 375 for 15-25min
