Paleo Cashew “Feta Cheese”, “Cream Cheese”, and “Hummus”

If you’re Paleo, you’ve kissed legumes goodbye. While I still love my beans and eat them every once in a while, the fat content in nuts works well with my fitness needs. Here is the same recipe, done 3 ways depending on what you’re in the mood for.

Cashew Feta Cheese-

  • 2 cups raw cashews (soaked in warm water 2-4hrs)
  • 1/2 cup unsweetened almond milk
  • 1/4 cup fresh lemon juice
  • 1/2 cup nutritional yeast (optional: this does enhance the “cheese” flavor and add protein)
  • 1 clove fresh garlic
  • 1 tsp salt

Blend all ingredients in food processor until smooth! This may take 5-7min.

Cashew Cream Cheese

  • 2 cups raw cashews (soaked in warm water 2-4hrs)
  • 1/2 cup unsweetened almond milk
  • 1/4 cup fresh lemon juice
  • 1/2 tbs honey
  • 1 tsp salt
  • optional add-ins- 1/2 cup freeze dried strawberries ground to a powder in food processor

Blend all ingredients in food processor until smooth! This may take 5-7min.

Cashew Hummus-

  • 2 cups raw cashews (soaked in warm water 2-4hrs)
  • 3/4 cup water
  • 1/4 cup fresh lemon juice
  • 1/2 cup nutritional yeast (optional: this does enhance the “cheese” flavor and add protein)
  • 4 cloves fresh garlic
  • 1 tsp salt
  • optional add-ins- roasted red peppers, pine nuts, basil

Blend all ingredients in food processor until smooth! This may take 5-7min.
