Chris’ Favorite Paleo Banana Bread

Chris loves Banana Bread, and I’ve tried many recipes that just don’t work for him. He likes it to taste entirely normal in texture as well. I love Elana’s Pantry almond flour banana bread, but it’s not normal enough for him, its very crumbley, and he prefers a more tradtional banana bread that’s easily sliced. This recipe I came up with is Chris approved!


  • 1/2 cup coconut flour
  • 1/4 cup arrowroot powder or tapioca flour
  • 4 eggs
  • 2 medium sized bananas
  • 1 tsp vanilla
  • 3 tbs melted coconut oil or palm shortening
  • 1/4 cup coconut sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • optional add-ins: 1/4 cup chopped walnuts, chocolate chips, cranberries.


Blend all together in food processor or high speed mixer. Cover with tin foil, Bake 325 for 20min, take off tin foil and Bake additional 25-30min.
